15-Minute Creamy Tomato Pasta

Ingredients:
- 2 cups pasta (penne, fusilli)
- 2 cups water or vegetable broth
- 1 cup passata (sieved tomatoes) or ½ cup tomato paste + 1 cup water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons cream or ¼ cup milk
- 1 teaspoon dried Italian herbs (or oregano)
- Salt and pepper to taste
Instructions:
- In a large pan or pot, add the uncooked pasta, water/broth, passata, onion, garlic, and herbs. Season with salt and pepper.
- Bring to a boil over high heat, then reduce to a simmer. Cook for 10-12 minutes, stirring frequently to prevent sticking, until the pasta is cooked and the sauce has thickened.
- Stir in the cream or milk and cook for one more minute.
- Taste and adjust seasoning. Serve immediately with a sprinkle of cheese if you have it!
