15-Minute Creamy Tomato Pasta

Ingredients:

  • 2 cups pasta (penne, fusilli)
  • 2 cups water or vegetable broth
  • 1 cup passata (sieved tomatoes) or ½ cup tomato paste + 1 cup water
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons cream or ¼ cup milk
  • 1 teaspoon dried Italian herbs (or oregano)
  • Salt and pepper to taste


Instructions:

  1. In a large pan or pot, add the uncooked pasta, water/broth, passata, onion, garlic, and herbs. Season with salt and pepper.
  2. Bring to a boil over high heat, then reduce to a simmer. Cook for 10-12 minutes, stirring frequently to prevent sticking, until the pasta is cooked and the sauce has thickened.
  3. Stir in the cream or milk and cook for one more minute.
  4. Taste and adjust seasoning. Serve immediately with a sprinkle of cheese if you have it!
