5-Minute Microwave Omelette in a Mug

Ingredients:

  • 2 large eggs
  • 1 tablespoon milk (or water)
  • 2 tablespoons shredded cheese (cheddar, mozzarella, anything you have)
  • Salt and pepper to taste
  • Optional: 1 tbsp finely chopped bell pepper or ham

Instructions:

  1. In a microwave-safe mug, whisk the eggs and milk together with a fork until well combined.
  2. Stir in the cheese, and any optional add-ins. Season with salt and pepper.
  3. Microwave on high for 1 minute. Stir the mixture with a fork.
  4. Microwave for another 30-60 seconds, or until the egg is fully set. (Cooking time varies by microwave).
  5. Let it sit for 1 minute before turning it out onto a plate or eating straight from the mug. Enjoy!
